Today’s Unique Creation: Blueberry Lemon Cheesecake Tarts

As the weather starts to warm up and fresh blueberries come into season, I couldn’t resist creating a new dessert to celebrate. These Blueberry Lemon Cheesecake Tarts are the perfect combination of sweet, tangy, and creamy, making them a delightful treat for any occasion.

Ingredients:

  • Digestive biscuit crumbs
  • Butter, melted
  • Cream cheese
  • Greek yogurt
  • Granulated sugar
  • Eggs
  • Lemon, zest and juice
  • Blueberries
  • Powdered sugar

Kitchen Tools:

Start by preheating your oven to 180°C (350°F). In a mixing bowl, combine the digestive biscuit crumbs and melted butter until the mixture resembles wet sand. Press the mixture into the bottom of each muffin tin cup to create a crust.

In a separate mixing bowl, beat together the cream cheese, Greek yogurt, and granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the lemon zest and juice until fully incorporated.

Pour the cheesecake mixture over the prepared crusts in the muffin tin. Bake in the preheated oven for 20-25 minutes, or until the cheesecakes are set but slightly jiggly in the center. Allow them to cool to room temperature before chilling in the fridge for at least 2 hours.

While the cheesecakes are chilling, prepare the blueberry topping. In a small saucepan, heat the blueberries and powdered sugar over medium heat until the blueberries burst and release their juices. Remove from heat and let cool.

Once the cheesecakes are chilled, top each one with a spoonful of the blueberry mixture. Serve the Blueberry Lemon Cheesecake Tarts chilled and enjoy the burst of flavors in every bite!

The approximate total weight of the cooked dish is 900g, with 12 servings. Each serving weighs approximately 75g, and the calorie count per serving is estimated to be around 250 calories.
