Indulge in This Surprising Beet and Avocado Dessert Creation!

Today, I’m excited to share a unique and delicious dessert recipe that incorporates unexpected flavors and textures. This recipe is perfect for those looking to try something new and adventurous in the kitchen.

Ingredients:

  • beets (250g)
  • avocado (1, ripe)
  • pistachios (50g, crushed)
  • coconut milk (100ml)
  • honey (2 tbsp)
  • dark chocolate (100g)

Kitchen Tools:

  • food processor
  • mixing bowl
  • saucepan
  • spoon

To start, peel and chop the beets into small cubes. Boil them in a saucepan until soft, then drain and let them cool. In a food processor, blend the cooked beets with the flesh of the ripe avocado until smooth. Add in the coconut milk and honey, and blend until well combined.

Next, melt the dark chocolate in a heatproof bowl over a pot of simmering water. Once melted, pour the chocolate into the beet and avocado mixture, stirring well to combine. Transfer the mixture into a mixing bowl and refrigerate for at least 30 minutes to set.

While the dessert mixture is chilling, crush the pistachios into small pieces. Once the mixture has set, scoop out small portions and shape them into balls. Roll each ball in the crushed pistachios until coated.

One clever tip for this recipe is to sprinkle a little sea salt on top of the chocolate-covered beet and avocado balls before rolling them in the pistachios. The salt adds a perfect balance to the sweetness of the dessert.

The total weight of the cooked dessert is approximately 600g, with enough to make 12 servings. Each serving comes in at around 50g, with an estimated calorie count of 150 per serving.
