Today, I’m excited to share with you my newest creation: Green Goddess Pasta. This dish is perfect for a light and refreshing summer meal that will leave you feeling satisfied and nourished. The combination of fresh herbs, creamy avocado, and zesty lemon create a vibrant and flavorful sauce that pairs perfectly with your favorite pasta.

Ingredients:

  • 200g pasta of your choice
  • 1 ripe avocado
  • 50g fresh basil leaves
  • 50g fresh parsley leaves
  • Juice and zest of 1 lemon
  • 2 cloves of garlic
  • 2 tbsp olive oil
  • Salt and pepper to taste

Kitchen Tools:

  • food processor
  • pot for cooking pasta
  • colander
  • zester

Start by cooking the pasta according to the package instructions. While the pasta is cooking, prepare the green goddess sauce. In a food processor, combine the avocado, basil, parsley, lemon juice and zest, garlic, olive oil, salt, and pepper. Blend until smooth and creamy.

Once the pasta is cooked, drain it using a colander and transfer it back to the pot. Pour the green goddess sauce over the pasta and toss until evenly coated. The vibrant green color of the sauce will brighten up the dish and add a burst of fresh flavor.

Serve the Green Goddess Pasta hot or at room temperature, garnished with a sprinkle of fresh herbs and a drizzle of olive oil. This dish is best enjoyed fresh, but any leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
