Ingredients:

  • 200g quinoa
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, diced
  • Handful of fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp olive oil
  • Salt and pepper to taste

I start by cooking the quinoa according to the package instructions in a saucepan. While the quinoa is cooking, I prepare the rest of the ingredients. In a large mixing bowl, I combine the cooked quinoa, diced mango, chopped red onion, diced red bell pepper, and fresh cilantro.

Next, I whisk together the lime juice, olive oil, salt, and pepper in a separate bowl to create a tangy dressing. I pour the dressing over the salad and gently toss everything together until well combined. The vibrant colors and fresh aroma of the mango and cilantro create a beautiful and inviting dish.

Once everything is mixed, I cover the bowl and let the flavors marinate for at least 30 minutes in the refrigerator. This allows the tangy dressing to infuse into the quinoa and enhance the overall taste of the salad. Before serving, I give the salad one final toss and garnish with some extra cilantro.

This tangy mango quinoa salad weighs approximately 800g when fully prepared. It serves 4 people with each serving weighing around 200g. Each serving contains approximately 250 calories.
