Today’s Recipe: Tangy Mango Quinoa Salad

As the weather starts to warm up, I find myself craving light, refreshing dishes that are bursting with flavor. That’s why I’m excited to share my recipe for a tangy mango quinoa salad with you today. This dish is perfect for a summer picnic, a quick lunch, or a colorful side dish for any meal.

Ingredients:

  • 200g quinoa
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 red bell pepper, diced
  • Handful of fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tbsp olive oil
  • Salt and pepper to taste

I start by cooking the quinoa according to the package instructions in a saucepan. While the quinoa is cooking, I prepare the rest of the ingredients. I dice the ripe mango, finely chop the red onion, and dice the red bell pepper. In a large mixing bowl, I combine the cooked quinoa, diced mango, chopped red onion, diced red bell pepper, and fresh cilantro.

Next, I whisk together the lime juice, olive oil, salt, and pepper in a separate bowl to create a tangy dressing. I pour the dressing over the salad and gently toss everything together until well combined. The vibrant colors and fresh aroma of the mango and cilantro create a beautiful and inviting dish.

Once everything is mixed, I cover the bowl and let the flavors marinate for at least 30 minutes in the refrigerator. This allows the tangy dressing to infuse into the quinoa and enhance the overall taste of the salad. Before serving, I give the salad one final toss and garnish with some extra cilantro.

Serving:

This tangy mango quinoa salad weighs approximately 800g when fully prepared. It serves 4 people with each serving weighing around 200g. Each serving contains approximately 250 calories.

Tips:

For an extra burst of flavor, try adding some crumbled feta cheese or toasted pumpkin seeds to the salad before serving. The creamy texture of the feta and the crunchy bite of the pumpkin seeds will take this dish to the next level.
