  • Chestnuts, roasted and chopped
  • Black rice
  • Fennel bulb, thinly sliced
  • Pomegranate seeds
  • Pistachios, chopped
  • Orange, zest and juice
  • Maple syrup
  • Olive oil

Once the squash, fennel, and rice are cooked, I combine them in a large mixing bowl with the chopped chestnuts, pomegranate seeds, and pistachios. I then drizzle over the maple syrup, orange zest, and juice, and toss everything together until well combined.
