Today’s Culinary Adventure: Sweet and Savory Stuffed Acorn Squash

As the leaves start to change colors and the air gets a bit crispier, I find myself craving cozy and comforting dishes that embrace the flavors of fall. That’s why I’m excited to share my recipe for sweet and savory stuffed acorn squash with you today. This dish is a delightful mix of flavors and textures that will surely warm your heart and soul.

For this recipe, you will need the following ingredients:

  • 2 medium acorn squash (about 800g each)
  • 200g ground turkey
  • 1 small apple, diced
  • 1/2 cup quinoa
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Salt and pepper to taste

Before you begin, make sure you have the following kitchen tools ready:

  • chef’s knife
  • cutting board
  • baking sheet
  • medium saucepan
  • mixing bowl

To start, preheat your oven to 400°F (200°C). Cut the acorn squash in half lengthwise and scoop out the seeds. Place the squash halves cut side down on a baking sheet and roast in the oven for about 30-40 minutes, or until they are tender.

While the squash is roasting, cook the quinoa according to package instructions in a medium saucepan. In a skillet, cook the ground turkey until browned. Add the diced apple, dried cranberries, chopped pecans, cinnamon, nutmeg, cooked quinoa, salt, and pepper to the skillet. Stir everything together until well combined and heated through.

Once the acorn squash is tender, remove them from the oven and carefully flip them over. Fill each squash half with the turkey and quinoa mixture, packing it down gently. Return the stuffed squash to the oven and bake for an additional 10-15 minutes to allow the flavors to meld together.

When the squash is golden brown and fragrant, remove it from the oven and let it cool slightly before serving. The combination of sweet apples, tart cranberries, crunchy pecans, and warm spices is truly a delight for the senses.

This recipe yields approximately 4 servings, with each serving weighing around 400g. One serving of this sweet and savory stuffed acorn squash is approximately 350 calories.

One clever tip for this dish is to sprinkle a touch of brown sugar on top of the stuffed squash before baking for an extra caramelized sweetness. It takes this dish to a whole new level of deliciousness!
