Ingredients:

  • 2 lobster tails (about 300g each)
  • 1 cup arborio rice (200g)
  • 1 cup cherry tomatoes, halved (150g)
  • 1/4 cup fresh basil leaves, chopped (10g)
  • 1/2 cup white wine (120ml)
  • 4 cups chicken broth (1 liter)
  • 1 small onion, finely diced (100g)
  • 2 cloves of garlic, minced
  • 1/2 cup heavy cream (120ml)
  • 2 tablespoons butter (30g)
  • 1/2 cup grated parmesan cheese (50g)
  • Salt and pepper to taste

Start by preparing the lobster tails. Bring a large pot of water to a boil and cook the lobster tails for about 5-7 minutes until they are opaque and cooked through. Remove the lobster meat from the shells and cut into bite-sized pieces.

In a saucepan, melt the butter over medium heat. Add the diced onion and minced garlic, cooking until softened. Add the arborio rice and cook for a few minutes until slightly toasted.

Pour in the white wine and allow it to simmer until mostly absorbed. Gradually add the chicken broth, one ladle at a time, stirring constantly until the rice is creamy and al dente. This process should take about 18-20 minutes.

Stir in the cherry tomatoes, lobster meat, fresh basil, heavy cream, and parmesan cheese. Season with salt and pepper to taste, and stir until everything is well combined and creamy.

Serve the creamy tomato basil lobster risotto hot, garnished with additional basil leaves and a sprinkle of parmesan cheese.
