Today, I’m excited to share a recipe that combines some of my favorite flavors: Spicy Mango Coconut Shrimp. This dish is perfect for a summer gathering or a cozy night in, and the unique combination of sweet mango, spicy chili, and creamy coconut will surely impress your taste buds.

Ingredients:

  • 400g large shrimp, peeled and deveined
  • 1 ripe mango, diced
  • 200ml coconut milk
  • 1 tsp chili flakes
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • Salt and pepper to taste

Start by heating a skillet over medium heat and adding a splash of oil. Cook the garlic and ginger until fragrant, then add the shrimp and chili flakes. Squeeze in the lime juice and season with salt and pepper. Stir in the chopped cilantro for a fresh burst of flavor. Serve the Spicy Mango Coconut Shrimp hot over steamed rice or with a side of quinoa for a healthy twist.
