  • 1 ripe mango (diced)
  • 1/2 red onion (thinly sliced)
  • 1 jalapeno (seeded and diced)
  • 1 lime (juiced)
  • 1/4 cup cilantro (chopped)
  • 1 tsp cumin
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 8 small tortillas
