As we transition into the warmer months, I find myself craving light, refreshing desserts that are packed with flavor. Today, I’m excited to share my recipe for Peach Basil Sorbet, a unique and delicious treat that combines the sweetness of ripe peaches with the savory notes of fresh basil.

For this recipe, you’ll need:

  • 750g ripe peaches (peeled and pitted)
  • 20g fresh basil leaves
  • 100ml honey
  • 30ml lemon juice

To prepare this delightful sorbet, you’ll need the following kitchen tools:

  • blender
  • fine mesh strainer
  • saucepan

Start by cutting the ripe peaches into chunks and placing them in a blender. Add the fresh basil leaves, honey, and lemon juice to the blender as well. Blend the mixture until smooth and well combined.

Next, pour the mixture through a fine mesh strainer placed over a saucepan to remove any pulp or chunks. Use a spoon to press down on the mixture to extract all the liquid.

Place the saucepan over medium heat and bring the mixture to a simmer. Let it cook for about 5 minutes, stirring occasionally. Remove from heat and allow the mixture to cool completely.

Once cooled, transfer the mixture to a shallow dish and place it in the freezer. Every hour, take the dish out and use a fork to break up any ice crystals that form. Repeat this process for about 4-5 hours or until the sorbet is frozen and has a smooth, icy texture.

Serve the Peach Basil Sorbet in small bowls or cones, garnished with fresh basil leaves for an extra pop of flavor.

This Peach Basil Sorbet recipe yields approximately 800g of sorbet, enough for 6 servings. Each serving is about 133g, with an estimated calorie count of 120 per serving.

One clever tip for this recipe is to add a splash of vodka to the mixture before freezing to create a smoother sorbet texture.
