Today’s Recipe: Creamy Avocado Pesto Pasta with Grilled Shrimp

Greetings, foodies! Today, I am thrilled to share a delightful and healthy recipe that combines two of my favorite ingredients: avocado and shrimp. This creamy avocado pesto pasta with grilled shrimp is perfect for a light and flavorful summer meal that will leave you feeling satisfied and nourished.

Ingredients:

  • whole wheat spaghetti (200g)
  • avocado (1, ripe)
  • fresh basil leaves (50g)
  • garlic cloves (2)
  • lemon juice (from 1 lemon)
  • olive oil (50ml)
  • salt (to taste)
  • black pepper (to taste)
  • shrimp (200g, peeled and deveined)

Kitchen Tools:

  • food processor
  • grill pan
  • large pot
  • zester

To start, cook the whole wheat spaghetti according to the package instructions in a large pot of salted water until al dente. While the pasta is cooking, prepare the creamy avocado pesto. In a food processor, combine the ripe avocado, fresh basil leaves, garlic cloves, lemon juice, olive oil, salt, and black pepper. Blend until smooth and creamy, adjusting the seasoning to your liking.

Once the pasta is cooked, drain it and return it to the pot. Pour the creamy avocado pesto over the pasta and toss until well coated. Set aside while you grill the shrimp. Heat a grill pan over medium-high heat and cook the peeled and deveined shrimp for 2-3 minutes on each side until pink and cooked through.

Serve the creamy avocado pesto pasta in bowls, topped with the grilled shrimp. Garnish with a sprinkle of black pepper, a drizzle of olive oil, and a squeeze of fresh lemon juice for an extra burst of flavor. Enjoy this delicious and nutritious meal with your loved ones!

The approximate total weight of the cooked dish is 700g, with 4 servings of around 175g each. One serving of this creamy avocado pesto pasta with grilled shrimp is approximately 400 calories.

One clever tip for this recipe is to reserve some pasta cooking water to thin out the avocado pesto sauce if needed. The starchy water helps create a smooth and creamy consistency without adding extra oil.

I encourage you to give this creamy avocado pesto pasta with grilled shrimp a try and make it your own by adding your favorite veggies or proteins. Happy cooking!
