Fall Flavors: Pumpkin and Fig Bake Recipe

Sharing a Seasonal Delight

As the weather starts to cool down and the leaves begin to change color, I find myself craving warm, comforting dishes that remind me of cozy nights at home. Today, I’m excited to share with you a unique and flavorful recipe that combines the richness of pumpkin with the earthy sweetness of figs. This dish is perfect for autumn and will surely become a new favorite in your seasonal cooking repertoire.

Ingredients:

  • 400g pumpkin puree
  • 250g fresh figs
  • 50ml maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 200ml coconut milk
  • 50g chopped pecans

Kitchen Tools:

  • whisk
  • spatula

To start, preheat your oven to 350°F (180°C). In a mixing bowl, combine the pumpkin puree, maple syrup, cinnamon, nutmeg, vanilla extract, and salt. Mix until well combined.

Slice the fresh figs into quarters and gently fold them into the pumpkin mixture. Pour the mixture into a greased baking dish and spread it into an even layer.

Bake the pumpkin and fig mixture for 25-30 minutes, or until the edges are slightly golden brown and the center is set. Remove from the oven and let it cool for a few minutes.

In a small saucepan, heat the coconut milk until it starts to simmer. Pour the warm coconut milk over the baked pumpkin and fig mixture. Sprinkle the chopped pecans on top.

Serve the pumpkin and fig bake warm, spooning the creamy coconut milk over each portion. This dish is perfectly sweet and spiced, with a lovely nutty crunch from the pecans.

This recipe yields approximately 4 servings, with each serving weighing around 200g. Each serving is estimated to be around 250 calories.

One unique tip for this dish is to sprinkle a pinch of sea salt on top before serving. The salt enhances the flavors of the pumpkin and figs, making each bite even more delicious.
