Deliciously Unique Grapefruit Basil Sorbet

Today, I’m excited to share a refreshing and unexpected dessert that combines the tartness of grapefruit with the herbaceous notes of fresh basil. This sorbet is perfect for hot summer days or as a palate cleanser between courses during a special meal.

Ingredients:

    <li data-ingredient="2 large grapefruits, juiced (about 300ml)"

    <li data-ingredient="1 cup sugar (200g)"

    <li data-ingredient="1/2 cup water (120ml)"

    <li data-ingredient="1/4 cup fresh basil leaves, chopped (10g)"

Kitchen Tools:

    <li data-tool="juicer"

    <li data-tool="saucepan"

    <li data-tool="whisk"

    <li data-tool="fine mesh strainer"

    <li data-tool="ice cream maker"

To start, combine the sugar and water in a saucepan over medium heat. Stir until the sugar is completely dissolved, about 5 minutes. Remove from heat and let the syrup cool to room temperature.

Meanwhile, juice the grapefruits until you have about 300ml of juice. In a blender, combine the grapefruit juice, cooled simple syrup, and chopped basil leaves. Blend until the basil is finely minced and fully incorporated into the mixture.

Strain the mixture through a fine mesh strainer to remove any pulp or large pieces of basil. Transfer the liquid to the bowl of an ice cream maker and churn according to the manufacturer’s instructions until you reach a smooth sorbet consistency.

Once the sorbet is ready, transfer it to a container and freeze for an additional 2 hours to set. Serve the grapefruit basil sorbet in chilled bowls or glasses for a delightful and unexpected dessert experience.

This recipe yields approximately 600g of sorbet, enough for about 6 servings. Each serving weighs around 100g and has an approximate calorie count of 120.

Clever Tip:

For a more intense basil flavor, steep the basil in the simple syrup as it cools to infuse the syrup with the herb before adding it to the grapefruit juice.
