  • 1 medium butternut squash (about 800g)
  • 2 large carrots (150g)
  • 1 medium onion (100g)
  • 3 garlic cloves
  • 4 cups vegetable broth
  • 2 sprigs of fresh thyme
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 2 tablespoons olive oil

To begin, heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until fragrant. Add in the cubed butternut squash and carrots, stirring occasionally until slightly browned.

Pour in the vegetable broth and add the fresh thyme, ground cinnamon, nutmeg, salt, and pepper. Bring the mixture to a simmer and let it cook for about 15-20 minutes, or until the vegetables are tender.

Once the vegetables are cooked through, remove the thyme sprigs and use an immersion blender to blend the soup until smooth and creamy. If you prefer a chunkier soup, you can also use a potato masher to mash some of the vegetables while leaving others intact for texture.

Taste the soup and adjust the seasoning if needed. Serve hot, garnished with a drizzle of olive oil and a sprinkle of fresh thyme leaves. This Butternut Squash Soup is perfect on its own or paired with a crusty loaf of bread for dipping.
