Spicy Mango Tofu Stir-Fry

Today, I’m excited to share a recipe that brings together the sweet and tangy flavors of mango with the spice of Sriracha in a delicious stir-fry. This dish is perfect for a quick weeknight dinner that’s both flavorful and satisfying.

Ingredients:

  • 200g firm tofu, cubed
  • 1 ripe mango, diced
  • 1 red bell pepper, sliced
  • 100g snow peas, trimmed
  • 1 small onion, thinly sliced
  • 2 cloves of garlic, minced
  • 1-inch piece of fresh ginger, grated
  • 3 tbsp soy sauce
  • 1-2 tbsp Sriracha sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 1/4 cup water
  • Cooked rice, for serving
  • Sliced green onions, for garnish

Kitchen Tools:

  • cutting board
  • garlic press
  • grater

To start, heat a tablespoon of sesame oil in a wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides. Remove the tofu from the wok and set it aside.

In the same wok, add a bit more sesame oil if needed, then sauté the onion, garlic, and ginger until fragrant. Add the sliced bell pepper and snow peas, and cook until they start to soften.

In a small bowl, whisk together the soy sauce, Sriracha, rice vinegar, cornstarch, and water. Pour this sauce into the wok and stir to combine with the vegetables. Add the cooked tofu back into the wok, along with the diced mango. Cook for another 2-3 minutes until the sauce thickens slightly.

Serve the spicy mango tofu stir-fry over cooked rice and garnish with sliced green onions. Enjoy the perfect balance of sweet, spicy, and savory flavors in every bite.
