  • store-bought pie crust (9-inch)
  • whole milk (480ml)
  • vanilla bean, split and seeds scraped
  • granulated sugar (150g)
  • cornstarch (30g)
  • salt (1/4 tsp)
  • egg yolks (4)
  • butter (60g), cubed

  • saucepan
  • whisk
  • pie dish (9-inch)

To start, preheat your oven to 350°F (180°C). Place the store-bought pie crust in a 9-inch pie dish and set aside. In a saucepan, heat the milk and vanilla bean (including the scraped seeds) over medium heat until hot but not boiling.

In a mixing bowl, whisk together the sugar, cornstarch, and salt. Add the egg yolks and whisk until smooth. Slowly pour the hot milk into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the custard thickens.

Remove the saucepan from heat and stir in the cubed butter until melted. Pour the custard mixture into the prepared pie crust. Bake in the preheated oven for 25-30 minutes, or until the custard is set and slightly golden on top.

Once the pie is done, let it cool to room temperature before serving. This Vanilla Bean Custard Pie weighs approximately 900 grams, serves 8, with an average serving weight of 112.5 grams. Each serving is approximately 250 calories.
