Delicious Coconut Curry Beef Stew

Ingredients:

  • 600g beef stew meat (cubed)
  • 400ml coconut milk
  • 2 tbsp curry powder
  • 1 large onion (chopped)
  • 3 garlic cloves (minced)
  • 1 tbsp ginger (minced)
  • 2 large potatoes (cubed)
  • 2 carrots (sliced)
  • 500ml beef broth

  • 2 tbsp vegetable oil

To start, heat vegetable oil in a large pot over medium heat. Add the chopped onions and cook until they become translucent. Then, add the garlic, ginger, and curry powder, stirring for about a minute until fragrant.

Next, add the cubed beef stew meat to the pot and brown on all sides. Season with salt and pepper to taste. Pour in the coconut milk and beef broth, stirring to combine. Bring the mixture to a boil, then reduce the heat and let it simmer for 1 hour, covered.

After an hour, add the cubed potatoes and sliced carrots to the pot. Continue cooking for an additional 30 minutes, or until the vegetables are tender and the beef is cooked through.

Once the stew is done cooking, taste and adjust the seasonings as needed. Serve hot and garnish with fresh cilantro if desired.
