Spicy Mango Chicken Stir-Fry

Today, I’m excited to share a recipe that’s perfect for adding a burst of flavor to your weeknight meals. This Spicy Mango Chicken Stir-Fry combines the sweetness of ripe mangoes with the heat of chili peppers, creating a harmonious blend of flavors that will tantalize your taste buds.

Ingredients:

  • 1 large chicken breast (200g), thinly sliced
  • 1 ripe mango (150g), cubed
  • 1 red bell pepper (100g), sliced
  • 1 small onion (50g), thinly sliced
  • 1 tablespoon fresh ginger (10g), minced
  • 2 cloves of garlic (5g), minced
  • 1 red chili pepper (5g), sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil

Kitchen Tools:

To start, heat the vegetable oil in a wok over medium-high heat. Add the sliced chicken breast and stir-fry until cooked through, about 5-6 minutes. Remove the chicken from the wok and set aside.

In the same wok, add the sliced onion, bell pepper, ginger, garlic, and chili pepper. Stir-fry for 2-3 minutes until the vegetables are slightly softened.

Next, add the cubed mango to the wok, along with the soy sauce, honey, and sesame oil. Stir well to combine.

In a small bowl, mix the cornstarch with water to create a slurry. Pour this mixture into the wok and stir until the sauce thickens.

Return the cooked chicken to the wok and toss everything together until the chicken is coated with the sauce. Season with salt and pepper to taste.

Serve the Spicy Mango Chicken Stir-Fry hot over steamed rice or noodles. Enjoy the perfect balance of sweet and spicy flavors in every bite!
