For this recipe, you will need the following ingredients:

  • Arborio rice (200g)
  • Red bell pepper (1, diced)
  • Yellow bell pepper (1, diced)
  • Green peas (100g)
  • Purple cabbage (100g, shredded)
  • Vegetable broth (1L)
  • Parmesan cheese (100g, grated)
  • Butter (50g)
  • Garlic (2 cloves, minced)
  • White wine (1/2 cup)
  • Salt and pepper to taste

To create this colorful dish, you will need the following kitchen tools:

  • Large skillet
  • Wooden spoon
  • Saucepan
  • Grater
  • Knife
  • Cutting board

Start by heating the vegetable broth in a saucepan over medium heat. In a large skillet, melt the butter and sauté the minced garlic until fragrant. Add the Arborio rice and cook for a few minutes until slightly toasted.

Deglaze the skillet with white wine and allow it to absorb into the rice. Begin adding the heated vegetable broth, one ladle at a time, stirring constantly until absorbed before adding the next ladle. This process should take about 20-25 minutes until the rice is creamy and cooked al dente.

In a separate pan, sauté the diced red and yellow bell peppers until slightly softened. Add the green peas and shredded purple cabbage, cooking until they are tender yet still vibrant in color.

Once the risotto is cooked to perfection, stir in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste. Finally, fold in the sautéed vegetables to create a beautiful rainbow effect in the risotto.

The total weight of the cooked rainbow risotto is approximately 1200g, making approximately 4 servings. Each serving weighs around 300g. This colorful dish is not only visually stunning but also packs a flavorful punch with each bite.
