Today’s Special: Spicy Mango Chicken Stir-Fry

As the weather gets warmer, I find myself craving light and refreshing meals that are easy to whip up after a long day at work. That’s why today, I’m excited to share my recipe for Spicy Mango Chicken Stir-Fry. This dish is a perfect balance of sweet and spicy flavors that will surely delight your taste buds.

For this recipe, you will need the following ingredients:

  • 200g chicken breast, sliced
  • 1 ripe mango, cubed
  • 1 red bell pepper, sliced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp sriracha sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • to taste
  • to taste

To prepare this dish, start by heating vegetable oil in a wok or large skillet over medium-high heat. Add the sliced chicken breast and cook until browned and cooked through. Remove the chicken from the wok and set aside.

In the same wok, add a bit more vegetable oil if needed, then add the garlic, ginger, and onion. Cook until fragrant, then add the bell pepper and mango. Cook for another 3-4 minutes until the vegetables are slightly tender.

In a small bowl, whisk together soy sauce, sriracha sauce, honey, rice vinegar, cornstarch, sesame oil, salt, and pepper. Pour this mixture over the vegetables and mango in the wok. Stir well to coat everything evenly.

Add the cooked chicken back to the wok and toss everything together until the sauce thickens slightly and coats all the ingredients. Once everything is heated through, your Spicy Mango Chicken Stir-Fry is ready to be served.

This delightful stir-fry weighs approximately 800g in total, making around 4 servings. Each serving is about 200g and contains approximately 300 calories.

A unique tip for this recipe is to sprinkle some toasted sesame seeds on top before serving for an extra burst of flavor and crunch.
