These Blueberry Lemon Quinoa Bars are a delightful treat that combines the tartness of fresh blueberries with the zesty kick of lemon, all nestled in a chewy quinoa-based crust. Whether you’re hosting a summer brunch or simply craving a sweet bite after dinner, these bars are sure to satisfy your sweet tooth guilt-free.

Ingredients:

  • 200g cooked quinoa
  • 150g fresh blueberries
  • 1 lemon, zest and juice
  • 75g almond flour
  • 50g honey
  • 50ml melted coconut oil
  • 1 tsp vanilla extract

To start, preheat your oven to 180°C and grease a baking dish. In a mixing bowl, combine the cooked quinoa, almond flour, honey, melted coconut oil, vanilla extract, and the zest of the lemon.
