Ingredients:

  • Quinoa (200g)
  • Cucumber, diced (100g)
  • Cherry tomatoes, halved (150g)
  • Red onion, finely chopped (50g)
  • Avocado, diced (1 medium)
  • Feta cheese, crumbled (50g)
  • Fresh cilantro, chopped (30g)
  • Lemon juice (from 1 lemon)
  • Olive oil (30ml)
  • Salt and pepper to taste

To start, rinse the quinoa under cold water to remove any bitterness. Cook it according to the package instructions in a saucepan with water until fluffy and tender. Let it cool slightly.
