I’m excited to share a unique and delicious recipe that I created for a cozy autumn evening. This dish brings together the flavors of fall with a touch of international flair, making it a perfect way to warm up as the weather starts to cool down.

Ingredients:

  • butternut squash (diced) – 500g
  • chorizo sausage (sliced) – 200g
  • coconut milk – 400ml
  • canned chickpeas (drained) – 250g
  • curry powder – 2 tbsp
  • fresh cilantro (chopped) – 1/4 cup

Kitchen Tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon

Start by heating a large skillet over medium heat. Add the sliced chorizo sausage and cook until it’s browned and crispy. Remove the sausage from the skillet and set it aside.

In the same skillet, add the diced butternut squash. Cook until it starts to soften, then stir in the curry powder. Pour in the coconut milk and bring the mixture to a simmer. Let it cook for about 10 minutes, allowing the flavors to meld together.

Add the drained chickpeas to the skillet, along with the cooked chorizo sausage. Stir everything together and let it simmer for another 5 minutes.

Once the butternut squash is tender and the flavors have infused, remove the skillet from the heat. Sprinkle the chopped cilantro over the top for a burst of freshness.

This seasonal fusion dish is bursting with flavor and warmth, perfect for enjoying on a cool autumn evening. The total weight of the cooked dish is approximately 1350g, with about 4 servings at around 338g each. One serving is approximately 450 calories.
