  • soba noodles (200g)
  • green tea bags (2 bags)
  • cucumber (100g, thinly sliced)
  • avocado (1, diced)
  • scallions (50g, thinly sliced)
  • toasted sesame seeds (15g)
  • soy sauce (30ml)
  • rice vinegar (15ml)
  • honey (10g)

  • whisk

To start, bring a large pot of water to a boil. Once boiling, add the green tea bags and let them steep for 5 minutes to infuse the water with the tea’s flavor. Remove the tea bags and add the soba noodles to the pot. Cook the noodles according to the package instructions until they are al dente. When ready, drain the noodles in a strainer and rinse them under cold water to stop the cooking process.

In a mixing bowl, whisk together the soy sauce, rice vinegar, and honey to create a tangy dressing. Add the cooled soba noodles to the bowl and toss them in the dressing until they are well coated.
