Introducing: Spicy Szechuan Noodle Soup

Hey there, foodies! Today, I am excited to share with you my latest culinary creation: Spicy Szechuan Noodle Soup. Inspired by the bold flavors of Szechuan cuisine, this dish is perfect for those cold winter nights when you need something to warm you up from the inside out.

For this recipe, I wanted to combine the heat of Szechuan peppercorns with the savory goodness of homemade chicken broth and the freshness of hand-pulled noodles. The result is a dish that is sure to tantalize your taste buds and leave you craving more.

To make this Spicy Szechuan Noodle Soup, you will need the following ingredients:

  • 4 chicken thighs (bone-in, skin-on)
  • 2 tbsp Szechuan peppercorns
  • 4 dried red chilies
  • 1-inch piece of ginger, sliced
  • 4 garlic cloves, smashed
  • 1.5 liters chicken stock
  • 3 tbsp soy sauce
  • 2 tbsp black vinegar
  • 1 tbsp sugar
  • 200g hand-pulled noodles
  • 2 green onions, chopped
  • Handful of cilantro, chopped

To bring this dish to life, you will need the following kitchen tools:

  • stockpot
  • slotted spoon
  • ladle

Start by heating a stockpot over medium heat and add the chicken thighs, Szechuan peppercorns, dried red chilies, ginger, and garlic. Cook until the chicken is browned on all sides, then remove the chicken and set it aside.

Pour in the chicken stock, soy sauce, black vinegar, and sugar. Bring the broth to a boil, then reduce the heat and simmer for 30 minutes. Return the chicken to the pot and simmer for another 20 minutes, until the chicken is cooked through.

While the soup is simmering, cook the hand-pulled noodles according to the package instructions. Divide the noodles into bowls and ladle the hot broth over the top. Top with the shredded chicken, green onions, and cilantro.

This Spicy Szechuan Noodle Soup weighs approximately 900g when cooked and serves 4 people. Each serving is around 225g and packs a spicy punch with approximately 350 calories.

One unique tip for this recipe is to add a spoonful of chili oil to the broth before serving for an extra kick of heat. It will take this dish to the next level and leave your taste buds tingling in the best way possible.

I hope you give this Spicy Szechuan Noodle Soup a try and enjoy it as much as I do. Feel free to customize it with your favorite toppings or adjust the spice level to suit your taste preferences. Happy cooking!
