  • 4 chicken thighs (bone-in, skin-on)
  • 2 tbsp Szechuan peppercorns
  • 4 dried red chilies

  • 1.5 liters chicken stock
  • 3 tbsp soy sauce
  • 2 tbsp black vinegar
  • 1 tbsp sugar
  • 200g hand-pulled noodles

Start by heating a stockpot over medium heat and add the chicken thighs, Szechuan peppercorns, dried red chilies, ginger, and garlic. Cook until the chicken is browned on all sides, then remove the chicken and set it aside.

Pour in the chicken stock, soy sauce, black vinegar, and sugar. Bring the broth to a boil, then reduce the heat and simmer for 30 minutes. Return the chicken to the pot and simmer for another 20 minutes, until the chicken is cooked through.

While the soup is simmering, cook the hand-pulled noodles according to the package instructions. Divide the noodles into bowls and ladle the hot broth over the top. Top with the shredded chicken, green onions, and cilantro.
