This unexpected pairing creates a dessert that is both decadent and surprisingly light at the same time.

Ingredients:

  • Roasted beets (200g)
  • Dark chocolate (150g)
  • Coconut milk (100ml)
  • Maple syrup (50ml)
  • Cocoa powder (30g)
  • Vanilla extract (10ml)
  • Sea salt (a pinch)

  • Food processor
  • Saucepan
  • Whisk
  • Ramekins

To start, preheat your oven to 400°F (200°C). Wash and peel the beets, then chop them into small cubes. Place them on a baking sheet and roast in the oven for about 30-40 minutes, or until they are tender.

In a saucepan, melt the dark chocolate over low heat, stirring constantly to prevent burning. Once melted, add the coconut milk, maple syrup, cocoa powder, vanilla extract, and a pinch of sea salt. Whisk everything together until smooth and well combined.

In a food processor, blend the roasted beets until they form a smooth puree. Add the chocolate mixture to the pureed beets and blend again until everything is fully incorporated.

Divide the mixture into ramekins and chill in the refrigerator for at least 2 hours to set. The flavors will meld together beautifully as it chills, creating a truly unique and indulgent dessert.

Once ready, serve the chocolate beet mousse chilled, topped with a dollop of whipped coconut cream or a sprinkling of cocoa powder for an extra touch of elegance.
