Ingredients:

  • butternut squash (diced) – 500g
  • arborio rice – 300g
  • onion (finely chopped) – 1
  • garlic (minced) – 3 cloves
  • vegetable broth – 1 liter
  • white wine – 1 cup
  • butter – 50g
  • parmesan cheese (grated) – 100g
  • olive oil
  • salt and pepper

To start, preheat your oven to 400°F (200°C). Place the diced butternut squash on a baking sheet, drizzle with olive oil, season with salt and pepper, and roast in the oven for about 30 minutes, or until tender and slightly caramelized.

In a large saucepan, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent. Add the arborio rice to the pan and toast it for a few minutes until slightly golden.
