Today’s Unique Creation: Spicy Mango Basil Chicken Curry

As the weather starts to cool down and the leaves begin to change, I find myself craving warm and comforting dishes that are packed with flavor. That’s why today, I’m excited to share my recipe for Spicy Mango Basil Chicken Curry. This dish combines the sweetness of mango with the herbal notes of basil and a kick of spice to create a unique and delicious curry that is perfect for the fall season.

To make this flavorful dish, you’ll need the following ingredients:

  • boneless, skinless chicken thighs (500g)
  • ripe mango, diced (1 large)
  • coconut milk (400ml)
  • fresh basil leaves (1 cup)
  • onion, diced (1 medium)
  • garlic cloves, minced (3 cloves)
  • ginger, grated (1 tablespoon)
  • red curry paste (2 tablespoons)
  • fish sauce (1 tablespoon)
  • lime juice (1 tablespoon)
  • vegetable oil
  • salt and pepper to taste

For this recipe, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • large skillet
  • wooden spoon
  • measuring spoons
  • grater

Start by seasoning the chicken thighs with salt and pepper. In a large skillet over medium heat, heat some vegetable oil and sear the chicken thighs until golden brown on both sides. Remove the chicken from the skillet and set aside.

In the same skillet, add the diced onion, minced garlic, and grated ginger. Cook until the onions are soft and translucent. Add the red curry paste and cook for another minute to release its fragrant flavors.

Pour in the coconut milk, fish sauce, and lime juice. Stir well to combine. Add the diced mango and fresh basil leaves. Bring the mixture to a simmer.

Return the seared chicken thighs to the skillet, nestling them into the curry sauce. Cover and let simmer for about 20-25 minutes, or until the chicken is cooked through and the flavors have melded together.

Once the chicken is cooked, taste the curry and adjust the seasoning with salt and pepper as needed. Serve the Spicy Mango Basil Chicken Curry hot over cooked rice or noodles.

This dish yields approximately 4 servings, with each serving weighing around 300g. One serving of this Spicy Mango Basil Chicken Curry is estimated to be around 400 calories.

For an extra touch of freshness and a burst of flavor, try garnishing the curry with some chopped fresh cilantro before serving. The cilantro adds a pop of color and a citrusy note that complements the sweetness of the mango and the heat of the curry.

I hope you enjoy trying out this unique and flavorful Spicy Mango Basil Chicken Curry! Feel free to adjust the spice level to suit your taste preferences or add in extra veggies for a more nutritious twist. Let me know how it turns out for you, and happy cooking!
