Today, I am excited to share with you a unique twist on a classic favorite – basil pesto pasta. The vibrant flavors of fresh basil combined with unexpected ingredients create a dish that will surprise and delight your taste buds. Let’s get started!

Ingredients:

  • 100g fresh basil leaves
  • 50g pistachios
  • 50g Parmesan cheese
  • 30g sun-dried tomatoes
  • 2 garlic cloves
  • 100ml olive oil
  • Juice of 1 lemon
  • 200g squid ink pasta
  • To taste
  • To taste

Kitchen Tools:

  • food processor
  • large pot
  • skillet
  • colander

Start by cooking the squid ink pasta according to the package instructions in a large pot of salted boiling water. While the pasta is cooking, prepare the pesto sauce. In a food processor, combine the basil leaves, pistachios, Parmesan cheese, sun-dried tomatoes, garlic cloves, olive oil, and lemon juice. Blend until smooth and creamy.

In a skillet, heat a bit of olive oil over medium heat. Add the pesto sauce and cook for a few minutes until heated through. Once the pasta is cooked, drain it in a colander and add it to the skillet with the pesto sauce. Toss everything together until the pasta is well coated.

Season with salt and black pepper to taste. Serve the unique basil pesto pasta hot, garnished with some extra basil leaves or Parmesan cheese if desired.
