Savor the Season: A Cozy Autumn Recipe for Mushroom and Pear Delight

As the leaves start to change color and the air becomes crisp, I find myself craving warm, comforting dishes that remind me of the cozy season ahead. Today, I’m excited to share with you a unique recipe that combines the earthy flavors of mushrooms with the sweetness of pears, creating a dish that is perfect for a fall evening at home.

Ingredients:

  • Portobello mushrooms (200g)
  • Bosc pears (150g)
  • Quinoa (100g)
  • Walnuts (50g)
  • Balsamic vinegar (30ml)
  • Maple syrup (15ml)
  • Thyme (5g)
  • Salt (to taste)
  • Pepper (to taste)

To start, preheat your oven to 375°F (190°C). Begin by cleaning the Portobello mushrooms, removing the stems, and slicing them into thin strips. Peel the Bosc pears, remove the cores, and cut them into bite-sized pieces. In a saucepan, cook the quinoa according to package instructions.

Next, place the sliced mushrooms and pear pieces on a baking sheet. Drizzle with balsamic vinegar and maple syrup, and sprinkle with thyme, salt, and pepper. Roast in the oven for about 20-25 minutes, or until the mushrooms are tender and caramelized.

In a small saucepan, toast the walnuts over medium heat until fragrant. Once toasted, roughly chop the walnuts and set aside.

Once the quinoa is cooked and the mushrooms and pears are roasted, combine everything in a large bowl. Toss gently to mix all the ingredients together. Adjust seasoning with salt and pepper as needed.

Serving:

The total weight of the cooked dish is approximately 600g. This recipe serves 4 people, with each serving weighing around 150g. Each serving is approximately 250 calories.

Tip:

To add an extra depth of flavor to this dish, try sprinkling some crumbled blue cheese on top before serving. The tanginess of the cheese pairs beautifully with the sweetness of the pears and the earthiness of the mushrooms.
