A Taste of Autumn: Butternut Squash Risotto

Today, I’m excited to share a cozy and comforting dish that really captures the essence of autumn. This Butternut Squash Risotto is creamy, flavorful, and perfect for chilly evenings when you’re craving something warm and satisfying.

Ingredients:

  • butternut squash (diced) – 300g
  • arborio rice – 200g
  • vegetable broth – 1 liter
  • onion (chopped) – 1 medium
  • garlic (minced) – 2 cloves
  • fresh sage – 10 leaves
  • white wine – 120ml
  • parmesan cheese (grated) – 50g
  • butter – 50g
  • salt and pepper – to taste

Kitchen Tools:

  • chef’s knife
  • cutting board
  • saucepan
  • wooden spoon
  • grater

To start, heat some olive oil in a large saucepan over medium heat. Add the chopped onion and garlic, and sauté until softened. Add the arborio rice and stir until the grains are coated in the oil and slightly toasted.

Next, pour in the white wine and cook until it has been absorbed by the rice. Begin adding the vegetable broth, one ladle at a time, stirring continuously and allowing the liquid to be absorbed before adding more. This process should take about 20 minutes.

While the risotto is cooking, in a separate pan, melt butter and add the diced butternut squash. Cook until the squash is tender. Season with salt, pepper, and chopped fresh sage.

Once the risotto is creamy and the rice is cooked al dente, stir in the cooked butternut squash mixture. Remove from heat and stir in grated parmesan cheese until melted and well combined.

Serve the Butternut Squash Risotto hot, garnished with a sprinkle of fresh sage leaves and an extra grating of parmesan cheese. Enjoy the creamy, nutty flavors of this comforting dish!
