Ingredients:

  • 1 large ripe mango (peeled and diced)
  • 1 ripe avocado (peeled and diced)
  • 1/2 cucumber (peeled and diced)
  • 1 red bell pepper (seeded and diced)
  • 1/4 red onion (finely diced)
  • 1 garlic clove (minced)
  • 2 tablespoons fresh cilantro (chopped)
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Transfer the mixture to a blender and blend until smooth and creamy. If the gazpacho is too thick, you can add a splash of water to reach your desired consistency. Taste and adjust the seasoning as needed.
