Today, I’m excited to share a dish that always brings a burst of flavor to my day – Spicy Thai Peanut Noodles. This dish is perfect for those moments when you’re craving something bold and savory, with just the right kick of spice. It’s a fusion of Thai and Western flavors that come together beautifully in this dish.

Ingredients:

  • rice noodles (200g)
  • red bell pepper (1)
  • carrots (2)
  • zucchini (1)
  • green onions (4)
  • peanuts (50g)
  • fresh cilantro (a handful)
  • garlic (2 cloves)
  • fresh ginger (1 tablespoon)
  • smooth peanut butter (3 tablespoons)
  • soy sauce (2 tablespoons)
  • lime juice (1 tablespoon)
  • sriracha (1 teaspoon)

  • large pot
  • wok
  • strainer
  • grater
  • garlic press

To start, bring a large pot of water to a boil and cook the rice noodles according to the package instructions. Drain and set aside. In a wok, sauté the sliced red bell pepper, carrots, zucchini, and green onions until tender yet still slightly crisp.

In a small bowl, mix together the garlic, ginger, peanut butter, soy sauce, lime juice, and sriracha to create the spicy peanut sauce. Add this sauce to the wok with the vegetables, along with the cooked rice noodles. Toss everything together until the noodles are well-coated with the sauce.

Finally, garnish the dish with peanuts and fresh cilantro for an extra crunch and burst of flavor. Serve hot and enjoy the delicious blend of savory and spicy flavors in these Thai Peanut Noodles.
