Today’s Inspiration: Healthy Raspberry Lemon Quinoa Bars

I am excited to share my newest creation with you all today. As the summer season is slowly coming to an end, I wanted to create a dessert that is not only delicious but also healthy. These Raspberry Lemon Quinoa Bars are the perfect combination of sweet and tart, with a surprising twist of quinoa for added texture and protein. Let’s dive into this unique recipe!

Ingredients:

  • 1 cup cooked quinoa
  • 1/2 cup oats
  • 1/4 cup almond flour
  • 1/4 cup maple syrup
  • 2 tablespoons fresh lemon juice
  • 1/2 cup fresh raspberries
  • 2 tablespoons melted coconut oil
  • 1 tablespoon chia seeds
  • 1 teaspoon vanilla extract

Kitchen Tools:

  • mixing bowl
  • baking dish
  • spatula
  • zester

To start, preheat your oven to 350°F (180°C) and line a baking dish with parchment paper. In a mixing bowl, combine the cooked quinoa, oats, almond flour, maple syrup, lemon juice, melted coconut oil, chia seeds, and vanilla extract. Mix well until all the ingredients are fully combined.

Gently fold in the fresh raspberries, being careful not to crush them. Pour the mixture into the lined baking dish and spread it out evenly with a spatula. Zest some lemon over the top for an extra burst of citrus flavor.

Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown. Remove from the oven and let it cool completely before slicing into bars. These bars are best served chilled, so refrigerate them for at least an hour before enjoying.

Approximate total weight of the cooked dish: 500 grams
Approximate number of servings: 8 bars
Average weight of one serving: 62.5 grams
Approximate calorie count per serving: 120 calories

One unique tip for this recipe is to sprinkle a little bit of sea salt on top of the bars before baking. The salt will enhance the flavors and balance out the sweetness of the raspberries and maple syrup.

I hope you give these Healthy Raspberry Lemon Quinoa Bars a try and make them your own by adding your favorite fruits or nuts. Enjoy this guilt-free dessert and feel good about indulging in a treat that nourishes your body. Happy baking!
