  • 2 apples, diced (about 300g)
  • 1 cup quinoa (180g), cooked
  • 1/4 cup dried cranberries (30g)
  • 1/4 cup chopped pecans (30g)
  • 2 tbsp maple syrup (30ml)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt

When it comes to kitchen tools, you’ll need:

To prepare the dish, I start by cutting the acorn squash in half and scooping out the seeds. I place them cut-side down on a baking sheet and roast them in the oven for about 30 minutes, until they are tender.

While the squash is roasting, I prepare the filling. In a mixing bowl, I combine the diced apples, cooked quinoa, dried cranberries, chopped pecans, maple syrup, cinnamon, nutmeg, and salt. I mix everything together until well combined.

Once the squash is tender, I remove them from the oven and carefully flip them over. I fill each squash half with the apple-quinoa mixture, packing it down gently. I return the filled squash to the oven and bake for an additional 15 minutes.
