Ingredients:

  • 200g purple potatoes, diced
  • 400g canned black beans, drained and rinsed
  • 6 corn tortillas
  • 1/2 red onion, diced
  • 1 avocado, sliced
  • 1 lime, juiced
  • Handful of fresh cilantro, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil
