Today’s Recipe: Spicy Mango Tofu Stir-fry

Hey there, foodies! Today I’m excited to share with you my latest creation – a Spicy Mango Tofu Stir-fry. I was inspired by the abundance of juicy mangoes at the farmer’s market this week, and I wanted to create a dish that was both sweet and spicy, perfect for a summer evening.

For this dish, you’ll need the following ingredients:

  • 250g firm tofu, cubed
  • 1 ripe mango, diced
  • 1 red bell pepper, thinly sliced
  • 1 small onion, diced
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 3 tbsp soy sauce
  • 2 tbsp sriracha sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil

To prepare this delicious stir-fry, start by pressing the tofu to remove excess water. In a large skillet, heat vegetable oil over medium-high heat. Add the tofu cubes and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.

In the same skillet, add a bit more oil if needed and sauté the garlic and ginger until fragrant. Add the diced onion and sliced bell pepper, cooking until they start to soften.

In a small bowl, mix together soy sauce, sriracha, rice vinegar, sesame oil, and cornstarch. Pour this sauce over the vegetables in the skillet. Add the mango chunks and cooked tofu back to the skillet, stirring everything together. Cook for a few more minutes until the sauce has thickened and everything is heated through. Season with salt and black pepper to taste.

Serve the Spicy Mango Tofu Stir-fry hot over a bed of steamed rice or noodles. The combination of sweet mango, spicy sauce, and crispy tofu is sure to delight your taste buds!
