The Perfect Fall Comfort Dish: Butternut Squash Mac and Cheese

As the fall season approaches, I find myself craving hearty and comforting dishes to cozy up with on chilly evenings. Today, I’m excited to share with you my unique twist on a classic favorite – Butternut Squash Mac and Cheese. This creamy and flavorful dish combines the richness of traditional mac and cheese with the sweetness of roasted butternut squash, creating a perfect balance of flavors that will leave your taste buds singing.

To start, gather the following ingredients:

  • butternut squash (500g)
  • macaroni (300g)
  • aged cheddar cheese (200g)
  • whole milk (500ml)
  • butter (50g)
  • all-purpose flour (50g)
  • nutmeg (1/2 tsp)
  • salt and pepper to taste

Before diving into the cooking process, preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper. Peel and dice the butternut squash into small cubes, toss them with a drizzle of olive oil, salt, and pepper, then spread them out evenly on the baking sheet. Roast the squash in the oven for 25-30 minutes until tender and slightly caramelized.

While the butternut squash is roasting, cook the macaroni according to the package instructions until al dente. Drain and set aside. In a saucepan, melt the butter over medium heat, then whisk in the flour to create a roux. Slowly pour in the milk while whisking continuously to avoid lumps. Let the sauce simmer until it thickens, then add grated cheddar cheese, nutmeg, salt, and pepper to taste.

Once the butternut squash is roasted and the cheese sauce is ready, combine them with the cooked macaroni in a large baking dish. Pour the creamy cheese sauce over the mixture, stirring well to ensure everything is evenly coated. Sprinkle some extra cheese on top for an irresistible golden crust.

Bake the Butternut Squash Mac and Cheese in the oven for 20-25 minutes until bubbly and golden brown on top. Let it cool for a few minutes before serving to allow the flavors to meld together.

This delicious dish yields approximately 1500g of creamy Butternut Squash Mac and Cheese, enough to serve 6 hungry individuals. Each serving weighs around 250g and is packed with approximately 400 calories.

For an extra special touch, try sprinkling crispy bacon or toasted breadcrumbs on top before baking for added crunch and flavor. This Butternut Squash Mac and Cheese is sure to become a fall favorite in your household, so give it a try and make it your own with your favorite toppings and seasonings. Enjoy!
