My Exotic Creation: Taro Root Coconut Curry

Today, I am excited to share a unique and flavorful dish that combines the earthy flavor of taro root with the creamy richness of coconut curry. This dish is perfect for a cozy night in or a special gathering with friends and family.

Ingredients:

  • Taro root (500g)
  • Coconut milk (400ml)
  • Fresh ginger (50g, sliced)
  • Turmeric powder (1 tsp)
  • Chili flakes (1 tsp)
  • Fresh coriander leaves (for garnish)

Kitchen Tools:

  • chef’s knife
  • cutting board
  • saucepan
  • wooden spoon

To start, peel and cube the taro root into bite-sized pieces. In a saucepan, combine the cubed taro root, sliced ginger, turmeric powder, and chili flakes. Pour in the coconut milk until the taro root is just covered. Bring the mixture to a simmer over medium heat, then reduce the heat to low and let it cook for about 20 minutes, or until the taro root is tender.

Once the taro root is cooked through, use a wooden spoon to gently mash some of the taro root pieces to thicken the curry. Taste and adjust the seasoning as needed with salt and pepper. Serve hot, garnished with fresh coriander leaves.

This Taro Root Coconut Curry weighs approximately 900g when cooked and serves 4. Each serving is around 225g, with an estimated calorie count of 300 per serving.

One unique tip for this dish is to add a squeeze of lime juice before serving to brighten up the flavors and balance the richness of the coconut curry.
