Today, I’m excited to share a cozy and comforting dish that is perfect for the fall season: Pumpkin Sage Gnocchi. This dish combines the earthy sweetness of pumpkin with the savory richness of sage to create a truly unique and delicious meal. Whether you’re looking for a hearty dinner on a chilly evening or just want to try something new, this recipe is sure to impress.

Ingredients:

  • 300g pumpkin puree
  • 400g potatoes
  • 200g all-purpose flour
  • 1 egg yolk
  • 1 tsp salt
  • 1/2 tsp pepper
  • 15g fresh sage leaves
  • 50g butter
  • 50g parmesan cheese

Kitchen Tools:

  • rolling pin
  • skillet

To start, peel and chop the potatoes, then boil them until they are fork-tender. Drain the potatoes and let them cool slightly before mashing them in a mixing bowl. Add the pumpkin puree, flour, egg yolk, salt, and pepper to the bowl and mix everything together until a dough forms. Roll out the dough on a floured surface and cut it into small gnocchi shapes.

In a skillet, melt the butter over medium heat and add the fresh sage leaves. Cook the sage leaves until they are crispy, then remove them from the skillet and set them aside. In the same skillet, cook the gnocchi in batches until they are golden brown and crispy on the outside.

Once all the gnocchi are cooked, serve them on a plate and top them with the crispy sage leaves and freshly grated parmesan cheese. The combination of flavors in this dish is truly delightful, with the pumpkin adding a subtle sweetness to the savory sage and cheese.
