Ingredients:

  • ramen noodles (200g)
  • coconut milk (400ml)
  • red curry paste (2 tbsp)
  • vegetable broth (500ml)
  • tofu, cubed (200g)
  • bell pepper, thinly sliced (1)
  • mushrooms, sliced (100g)
  • baby corn, halved (100g)
  • lime, juiced (1)
  • fresh cilantro, chopped (for garnish)

Kitchen Tools:

  • wooden spoon
  • knife
  • cutting board
  • ladle

To start, heat a large pot over medium heat and add the coconut milk and red curry paste. Stir until well combined and aromatic, about 2 minutes. Slowly pour in the vegetable broth and bring the mixture to a simmer.

Add in the tofu, bell pepper, mushrooms, and baby corn. Let everything cook for about 10 minutes until the vegetables are tender and the flavors have melded together. Squeeze in the lime juice for a pop of freshness.

While the soup is simmering, cook the ramen noodles according to the package instructions. Once cooked, divide the noodles into serving bowls and ladle the coconut curry soup over them.
