Today’s Sweet Creation: Spiced Carrot Cake Muffins

As the weather starts to cool down and fall approaches, I find myself craving warm, spiced treats that embody the cozy essence of the season. That’s why today, I’m excited to share my recipe for Spiced Carrot Cake Muffins. These muffins are the perfect balance of sweetness and spice, with a moist, tender crumb that will have you coming back for seconds.

Ingredients:

  • 200g carrots, grated
  • 150g whole wheat flour
  • 100g coconut sugar
  • 120ml almond milk
  • 80ml coconut oil, melted
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 50g walnuts, chopped

Kitchen Tools:

  • muffin tin
  • grater
  • oven

To start, preheat your oven to 350°F (180°C) and line a muffin tin with paper liners. In a large mixing bowl, combine the grated carrots, whole wheat flour, coconut sugar, ground cinnamon, ground nutmeg, and baking powder. In a separate bowl, whisk together the almond milk, melted coconut oil, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chopped walnuts. Divide the batter evenly among the muffin cups and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Once baked, remove the muffins from the oven and allow them to cool slightly before serving. These Spiced Carrot Cake Muffins are perfect for breakfast on-the-go or as a satisfying afternoon snack.

The approximate total weight of the cooked dish is 600g, with 12 servings at around 50g per muffin. Each muffin is approximately 180 calories.

One unique tip for these muffins is to sprinkle a little extra cinnamon on top of each muffin before baking for a beautiful, fragrant finish.
