The inspiration for this dish came to me during a hot summer day when I was craving something filling yet light. These stuffed bell peppers are packed with bold flavors and wholesome ingredients, making them a perfect addition to any healthy eating routine.

Ingredients:

  • 4 medium bell peppers
  • 1 head of cauliflower, grated
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn
  • 1 jalapeño, minced
  • 1/2 cup of salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1/4 cup of chopped fresh cilantro

To start, preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish and set aside.

In a mixing bowl, combine the grated cauliflower, black beans, corn, minced jalapeño, salsa, cumin, chili powder, salt, and pepper. Mix well until all the ingredients are evenly distributed.

Spoon the cauliflower rice mixture into the hollowed-out bell peppers, pressing down gently to pack the filling. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, until the bell peppers are tender.

Once the bell peppers are done, remove them from the oven and sprinkle chopped cilantro on top for a fresh kick of flavor. Serve the spicy cauliflower rice stuffed bell peppers hot and enjoy!
