Ingredients

  • 1 large sweet potato, diced
  • 1 can of black beans, drained and rinsed
  • 6 corn tortillas
  • 1 red bell pepper, sliced
  • 1 onion, diced
  • 1 avocado, sliced
  • Fresh cilantro, chopped
  • 1 lime, cut into wedges
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil
  • Salt and pepper to taste

Preparation

Start by preheating your oven to 400°F (200°C). Place the diced sweet potato on a baking sheet, drizzle with olive oil, cumin, paprika, garlic powder, salt, and pepper. Toss to coat evenly and roast in the oven for 20-25 minutes until tender.

In a skillet, heat a tablespoon of olive oil over medium heat. Add the sliced bell pepper and diced onion, cooking until softened. Add the black beans to the skillet and season with salt and pepper.

Warm the corn tortillas on a separate skillet until slightly browned and pliable. Assemble the tacos by spooning the sweet potato and black bean mixture onto each tortilla. Top with avocado slices, fresh cilantro, and a squeeze of lime juice.
