Start by preheating your oven to 375°F (190°C). Clean the Portobello mushrooms, remove the stems, and gently scrape out the gills with a spoon to make room for the stuffing.

In a skillet, heat olive oil over medium heat. Add the diced red bell pepper, zucchini, red onion, and minced garlic. Cook until the vegetables are tender, then remove from heat and transfer to a mixing bowl. Add cooked quinoa, mozzarella cheese, and Parmesan cheese to the bowl. Mix everything together until well combined.

Divide the mixture evenly among the Portobello mushrooms, pressing down gently to pack the stuffing. Place the stuffed mushrooms on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is melted and bubbly.
