Savor the Flavor: Lamb and Couscous Comfort Food Recipe

I’m excited to share a new recipe with you today that combines all of my favorite flavors in one delicious dish. The dish I’m sharing is perfect for a cozy night in or a gathering with loved ones—it’s comfort food at its best!

Ingredients

  • ground lamb
  • eggplant
  • fennel bulb
  • couscous
  • ground cumin
  • ground cinnamon
  • pomegranate seeds
  • chopped pistachios
  • chopped fresh mint
  • Greek yogurt
  • salt and pepper

  • medium saucepan
  • large skillet

Preparation

I begin by preheating my oven to 400°F (200°C) and lining a baking sheet with parchment paper. Next, I peel and dice the eggplant and fennel bulb into small pieces. I spread the diced vegetables on the baking sheet, drizzle them with olive oil, sprinkle with salt and pepper, and roast them in the oven for about 20 minutes until tender.

While the vegetables are roasting, I cook the couscous according to the package instructions in a medium saucepan. In a large skillet, I brown the ground lamb over medium heat, seasoning it with cumin, cinnamon, salt, and pepper.

Once everything is cooked, I combine the roasted veggies, lamb, and couscous in the skillet, mixing them together until well combined. I then sprinkle in the pomegranate seeds, chopped pistachios, and fresh mint, giving everything a final toss.

To serve, I divide the lamb and couscous mixture among plates, topping each portion with a dollop of Greek yogurt for a creamy finish. The dish is ready to enjoy!

Tips for Success

For an extra burst of flavor, try squeezing some fresh lemon juice over the finished dish before serving. The acidity will complement the richness of the lamb and the nuttiness of the couscous perfectly.
