Mango Coconut Quinoa: A Flavor Explosion in Every Bite!

Today, I’m excited to share a brand new recipe that I recently created. This dish is perfect for a cozy night in or a special occasion when you’re craving something different and delicious. I hope you enjoy making it as much as I do!

Ingredients:

  • pomegranate seeds
  • coconut milk
  • mango, diced
  • quinoa
  • cashews, chopped
  • lime, juiced
  • curry powder
  • cinnamon
  • salt
  • coconut oil

Kitchen Tools:

  • chef’s knife
  • cutting board
  • medium saucepan
  • stirring spoon
  • grater
  • measuring cups and spoons

To start, rinse the quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce the heat to low, cover, and let simmer for about 15-20 minutes until the quinoa is cooked and the water is absorbed.

While the quinoa is cooking, heat the coconut oil in a separate pan over medium heat. Add the diced mango and cook until it starts to caramelize. Add the curry powder, cinnamon, and salt, stirring to combine.

Once the quinoa is cooked, fluff it with a fork and transfer it to the pan with the mango. Add the coconut milk, lime juice, pomegranate seeds, and chopped cashews. Stir everything together until well combined and heated through.

Serve the quinoa mango mixture hot, garnished with extra pomegranate seeds and cashews. Enjoy the creamy coconut milk paired with the sweet mango and tangy lime—it’s a flavor explosion in every bite!

This dish serves 4 people, with each serving weighing approximately 300g. One serving of this dish is around 350 calories.

One unique tip for this recipe is to toast the cashews before adding them to the dish for an extra depth of flavor and crunch.
