Growing up, I always enjoyed the cozy feeling of fall, with its crisp air and warm colors. Today, inspired by the season, I’m sharing a unique recipe for savory pumpkin fritters that perfectly captures the essence of autumn.

Ingredients

  • 500g pumpkin puree
  • 150g chickpea flour
  • 100g crumbled feta cheese
  • 2 stalks of green onions, thinly sliced
  • 2 cloves of garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Olive oil for frying

To prepare the fritter batter, start by combining the pumpkin puree, chickpea flour, crumbled feta cheese, green onions, minced garlic, cumin, smoked paprika, salt, and pepper in a mixing bowl. Use a fork to mix everything together until well combined.

Heat some olive oil in a skillet over medium heat. Take a spoonful of the pumpkin mixture and carefully drop it into the skillet, flattening it slightly with the back of the spoon. Cook the fritters for 3-4 minutes on each side, until they are golden brown and cooked through.

Once the fritters are cooked, remove them from the skillet and place them on a paper towel-lined plate to drain any excess oil. Serve the pumpkin fritters warm, garnished with a dollop of Greek yogurt or a sprinkle of fresh herbs.
