Ingredients:

  • fresh pineapple chunks
  • chicken breast, sliced
  • red bell pepper, sliced
  • jalapeño pepper, diced
  • small red onion, sliced
  • garlic, minced
  • chili powder
  • cayenne pepper
  • paprika
  • chopped cilantro
  • lime, juiced
  • small corn tortillas

To start, heat a skillet over medium-high heat and cook the chicken until browned and cooked through. Remove from the skillet and set aside. In the same skillet, sauté the red bell pepper, jalapeño, red onion, and garlic until softened. Add the chili powder, cayenne pepper, and paprika, stirring to combine.

Meanwhile, heat a grill pan over medium-high heat and grill the fresh pineapple until charred and caramelized. Remove from the grill and chop into smaller pieces.

Add the grilled pineapple and cooked chicken back to the skillet with the vegetables. Squeeze fresh lime juice over the mixture and toss to combine. Stir in the chopped cilantro for a burst of fresh flavor.

Warm the corn tortillas in a separate skillet or directly over an open flame until slightly charred and pliable. Fill each tortilla with a generous scoop of the spicy pineapple and chicken mixture. Top with additional cilantro and a squeeze of lime juice, if desired.
