Today, I’m excited to share a recipe that’s perfect for those cozy autumn evenings when you just want to indulge in a warm, comforting dessert. This caramelized banana bread pudding is a decadent twist on a classic favorite, and it’s guaranteed to satisfy your sweet tooth.

Ingredients:

  • 3 ripe bananas (250g)
  • 6 cups of stale bread, cubed (200g)
  • 3 eggs
  • 2 cups of milk (500ml)
  • 1/2 cup of brown sugar (100g)
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon
  • 2 tablespoons of butter (30g)

To start, preheat your oven to 350°F (180°C). In a saucepan, melt the butter over medium heat. Add the brown sugar and let it caramelize for a few minutes until it turns a deep amber color. Slice the bananas and add them to the caramel, cooking until they are coated and softened.

In a mixing bowl, whisk together the eggs, milk, vanilla extract, and cinnamon. Add the cubed bread to the bowl and mix until well combined. Pour the caramelized banana mixture over the bread and gently fold it in, ensuring everything is evenly coated.

Transfer the bread pudding mixture to a greased baking dish and bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the pudding is set. Remove from the oven and let it cool slightly before serving.
